Guys,
Who
noticed that we are fully in the harmattan season over here in Nigeria? Yea,
indeed we are. And this is a period where we have men and women with broken
lips and white body (you know what I mean). One needs to have a lubricating and
lasting cream on in order to avoid "white body and broken lips".
Who
also doesn't know that the Christmas season is on? There will be eating, drinking
and all forms of merriment. What do you think of making your own snack to spice up the
season?
Great idea, yeah? Yeah, I thought as much.
So, I
chose to teach us today how to make VASELINE FOR THE SEASON and MEAT/CHICKEN
PIE.
Everybody loves pies... Now let's see how we can make one for ourselves...
Meat/Chicken Pie
Chicken/Meat
Pie is a tasty snack, filled with minced de-boned (the bones have been removed) chicken or meat and
vegetables.
For
the meat or Chicken Pie Dough:
- Plain Flour -- 500g
- Baking Powder -- 1 teaspoon
- Salt -- (a big pinch)
- Margarine -- 200g
- Water - about 75 ml
Ingredients:
- For the Chicken Pie Filling:
- 300g of minced chicken breast (or beef)
- a medium-sized onion
- a little garlic/garlic powder (optional)
- 2 medium-sized carrots
- 2 medium-sized Irish potatoes
- a cooking spoonful of Vegetable Oil
- Seasoning of choice (but preferably) - Maggi/Knorr cubes, a teaspoon of thyme, a teaspoon of curry
- 2 tablespoons of plain flour (to make a binder)
- Cool water -- 200ml
- Salt -- to taste
Before
you make the Chicken/Meat Pie:
**Grind
or mince the chicken or beef, if you haven’t done that yet.
**Chop
or mince the onions and set aside
**Wash
and Scrape the carrots, Peel the Irish potatoes, rinse these vegetables (carrot
& potatoes) and cut into very tiny cubes.
Now
to prepare the Chicken Pie dough
**Break
the egg, beat it and set aside
**Grease
an oven tray: Do this by rubbing a little margarine inside the tray you can
also use baking sheets to line the tray. Set the tray aside for later use.
**Next,
Put the 500g of flour into a big bowl; add 1 teaspoon of baking powder and a
pinch of salt. Mix well.
Directions
for making Meat or Chicken Pie
**First
step is to prepare the Chicken or Meat Pie Filling.
**Heat
up the oil on medium heat. Then add the chopped onions and stir fry a bit; add
the minced chicken or meat to the pot and stir well till the minced chicken
turns white.
Now,
add 1 cup of water to the pot, and then add the curry, thyme and garlic
powder. Cover the pot and leave to boil.
**As
the minced meat begins to boil, add salt to taste and allow the meat or chicken
cook well until it is very soft, add the diced carrots and potatoes and leave
to cook until the vegetables are done.
**Next,
dissolve 2 tablespoonful of the plain flour in half cup of water. Mix well and
add the mix to the chicken pie filling in the pot. This is what I call the
''binder'', it helps to bind the filling together and keep the filling moist
when baking.
**Now
mix thoroughly, put off the heat and set aside to cool a bit.
Add
the margarine and mix thoroughly until the mixture looks more like bread
crumbs.
**Now,
add just a little cold water, bit by bit, and keep on mixing until you get a
stiff dough.
**Knead
the dough well and leave to rest for 5 minutes, then place on a lightly
floured table.
**Now,
Preheat the oven at 335°F or 170°C and continue with the chicken
pies.
**Next,
roll the dough on the table, it shouldn’t be too flat or too thick.
**Cut
the dough into several square and rectangles, and then using a tablespoon,
scoop some of the chicken pie filling and place in the center of the square or
rectangular cut dough. Don’t add a lot of filling, so that your Chicken pie won’t
be bumpy at the top.
Now
rub the whisked egg, on the edges of the dough you are working with. The egg
helps to seal the meat or chicken pies.
**The
next step is to fold one side of the square or rectangular dough to join the
other side. Use a fork to press the edges tight. You can also make tiny holes
at the top. This also forms a pretty design.
Now
transfer unto the greased tray and repeat this process for the remaining
Squares.
**When
all the chicken or meat pies are folded, rub the whisked egg on the surface of
the pies. The egg helps to give the chicken or meat pie a golden glow after
baking, but this is optional.
**Place
the Chicken or meat pies in the preheated oven and leave to bake for 35 minutes
or until the pies are lightly browned. Since the heating capacity differ from
oven to oven, it is advisable to check the chicken pies from time to time, if
you are not sure of the temperature of your oven.
Note:
You can also use meat pie cutter to cut out the shapes.
The
Chicken or meat pies are ready when they are lightly brown… Enjoy!
FOR OUR VASELINE
Ingredients:
Petroleum
jelly -7 table spoon
Glycerin
- 2 - 4 drops
Lanolin
- 1 teaspoon
Paraffin
wax - 1 table spoon
Paraffin
oil - 5 table spoon
Color
- very small
Fragrance
- not more than 5 drops
METHOD
**Heat
your paraffin oil in a pot (3mins)
**Add
the wax (make sure it dissolves)
**Add
d lanolin (put off the fire) allow it cool
**Add glycerin,
Perfume and color.
With
this you can stop looking like an Eskimo and shine bright like a diamond! Lol...
